Paul McCartney & Wings - 'My Love' - Henry McCulloch delivers a gorgeous solo.
Free - 'Be My Friend' - Kossoff doing what he did
Todd Rundgren - 'The Last Ride' - Todd killing on this one
David Bowie - 'Moonage Daydream' - Mick Ronson's iconic solo
Steely Dan - 'Aja' - Denny Dias
Threshold - 'Pilot in the Sky of Dreams' - Karl Groom
Earth, Wind & Fire - 'That's the Way of the World' - Al McKay
Mott the Hoople - 'Hymn for the Dudes' - Mick Ralphs

I probably go away and think of some more...

No quite sure what we are counting as "ballads" here. Originally ballads referred to poems, usually set to music, that contained a story. The folk tradition maintained this meaning with songs like Bob Dylan's The Ballad of Hollis Brown. Somewhere along the way, ballads also started referring to slow, sometimes sappy love songs.

Given the multiple definitions, here are some suggestions:

Prince - Purple Rain
The Beatles - Something
Jimi Hendrix - Little Wing
The Eagles - Hotel California

You have a point grin Yea, I just added that because I tried to go for those with really lengthy guitar solos, in the end I found I had to take some in with shorter solos too to balance the mix out.
