I'm not sure what part of the US you visited that made finding good bread a nuisance. I can find just about all the breads you listed freshly baked at a couple of different local bakeries. In fact even our supermarkets have bakeries in them where you can find an assortment of freshly baked breads.

If you visit major cities the selection of bakeries increases dramatically, and you can find just about any type of bread you want.

I don't eat bread that often but when I do it's usually from a nice freshly baked loaf of something tasty. Definitely like a good bread with some pasta, and I also try and sample a good local bakery when I travel.

I'll be going to Chicago for a few days in June, and in addition to hitting at least one great Steakhouse, I'll be sampling some bakeries there for sure. smiley

Yes I know, every part of the US is different. I was in Fort Wayne, Indiana, and it was hard to find bakeries in the first place, those we found were Mexican. They had nice pastry. The bread from supermarkets ( = Walmart) in plastic bags was soft yucky stuff that didn't taste like anything.

There's one thing that bugs me, this recent preoccupation people are having with gluten. Just goes to show how far a little marketing savvy can go.

There is nothing specifically bad about gluten. There is no scientific and clinical evidence that links it to any specific ailment, other than the issue of <1% of the population that have an immunological reaction to it. All the negative perception basically comes from anecdotal sources...somebody saying that they removed it from their diet and now felt better, or somebody commenting that they get a headache when they eat it, or some other nonsense. People have been eating gluten for centuries and seemed to have survived fairly well. Individuals who have eaten gluten all of their lives without a hint of an issue are now suddenly struck by all kinds of ailments shortly after being told that gluten is bad. Seriously? Now, products that had never any gluten to begin with are being labelled "GLUTEN FREE!", at extra cost. rolleyes It's all a big joke.

I understand your take on this, I really do. I used to think the same thing.

But the part I quoted is the part I have issue with. You suggest people like myself are so guilable we imagine we feel better, all because it was suggested to us that gluten free would help.

When a person (me) is suffering with an ailment that is interrupting their life and limiting their options on a daily basis, and the person tries gluten free (or at least 80% Gluten-free) based on a suggestion by a professional, not really trusting that it will make a difference, but being desperate so tries it anyway.

Then a month later, without changing anything else, the ailment is significantly improved. Which has the ripple effect of giving the person a good night's sleep, which in turn affects energy levels and clarity, and that positively affects lives experience.
Then I start to think perhaps there is something to this.

Then a little while goes by, and forgetting how crap the person (me) felt when they got no sleep because of said ailment, they start up with the gluten again. Only to find quite quickly the ailment returns.


That's pretty hard to argue with.

I think the stigma around gluten stems from the fact most of the gluten products digested today are contained in highly processed food products and therein lies the problem. It's not so much the gluten per se, it's the processing that goes along with it.

I agree with Henry that the marketing hype has gotten ridiculous, signs saying moronic things like "Gluten-free Tomatoes!" and the like.

However, I am not willing to dismiss the claims of people who say a gluten-free diet has made them feel better as "nonsense." I know several very credible people--including Lily--who have said this is the case. "Anecdotal" evidence perhaps, and just because science hasn't definitively confirmed the health benefits, that doesn't mean it's not true.

When I was a teenager it was widely believed that eating chocolate caused acne. I personally found this to be the case, as did many people I knew. Now, studies claim that this was a myth... that there is no connection. I say bullshit. I've seen it, and I believe it. I've read many studies claiming that children under the age of four have no concept of time... the meaning of "later" or "yesterday" or "tomorrow." Again, horse-hockey. And don't get me started on all the scientific studies about what dogs know.

So yeah, there are probably people out there who are wishful-thinkers, and many who overstate the benefits of gluten-free... but when many intelligent, credible people I know claim it's benefited them, who am I to say it ain't so?
